Nicole Litsa

Nikoleta’s professional journey began in 2015 in service, and in 2020 she moved into bartending. Through continuous training and professional development, she quickly advanced to the position of Head Bartender at Diego Athens.

She then worked as Head Bartender at See You Soon in Tinos, followed by her collaboration with Abstract Multiverse in Athens. The following summer, she worked in Mykonos at Zuma as a bartender, gaining experience in demanding, high-standard environments.

Soon after, she took the next step in her career by opening her own bar in the center of Athens, Ichigo Ichie, a concept inspired by Japanese influences with a contemporary approach to cocktails.

She has attended training programs at Bar Academy and Fogcutters, continuously developing her knowledge and approach to modern bartending.
