This seminar offers comprehensive training in the creation of homemade ingredients, infusions, and garnishes, maximizing the use of every product behind the bar — ensuring nothing goes to waste.
WHAT YOU WILL LEARN
Participants will gain hands-on experience in:
The five-day program combines theory and practical application, ensuring that participants can immediately apply these techniques in their workplace. The seminar concludes with real-life applications, focusing on recipe creation, cocktail presentation, and professional execution.
PRESERVATION & STORAGE TECHNIQUES
This module focuses on preserving ingredients to enhance flavor and minimize waste behind the bar. Participants will learn techniques for creating and storing homemade ingredients such as orange marmalade, citrus cordial, citrus oleo-saccharum, fresh herb syrups, and fruit purées. These essential skills help bartenders elevate their cocktails while ensuring sustainability and efficiency in ingredient management.
INFUSIONS & AROMATICS
This module centers on flavor extraction techniques to enrich cocktail ingredients. Participants will explore hot and cold infusions, blend infusions, and fat-washing methods, learning how to bring depth and complexity to spirits. Through hands-on practice, they will master both cold and hot fat-washing, creating unique textures and multi-layered flavors in their cocktails.
CREATIVE TECHNIQUES
This module dives into modern bartending methods that enhance texture, presentation, and flavor. Participants will be introduced to techniques such as gel and veil creation, clarification, carbonation, mousse preparation, spherification, as well as the use of foams, airs, and espumas. With practical training, they will learn how to integrate these advanced methods into their cocktails, adding innovation and sophistication to their craft.
ZERO-WASTE MANAGEMENT
This module emphasizes sustainable bartending practices, aiming for maximum utilization of ingredients and minimal waste. Participants will learn techniques such as making chips, extracting powders, caramelization, dehydration, and reusing pulp. By transforming by-products into valuable cocktail components, they will strengthen both their sustainability efforts and their creativity.
SEMINAR MATERIALS, CERTIFICATION & ATTENDANCE POLICY
Each participant enrolled in this seminar receives the training program notes, which include sample recipes to support learning and practical application.
Participants who successfully complete the full training program and pass both theoretical and practical assessments will be awarded a Certificate of Completion. If the required criteria are not met, the certificate will not be issued.
