The Rise of Aperitif Culture & The Role of Lillet

An aperitif is more than just a category of drinks. It represents a culture rooted in France and Italy, centred around a particular moment of the day: when work comes to an end, friends gather, and the first drink sets the tone for the evening.

The so-called aperitif culture is not simply about what is served in the glass. It is about connection, conversation and the first impression a bar creates for its guests. In recent years, this culture has experienced a strong revival across bars worldwide, influencing both consumer behaviour and the way modern cocktail menus are designed.

For bar professionals, understanding this culture has become increasingly important. Knowing how to prepare a Spritz or an aperitif serve is only part of the picture. Equally important is understanding when to recommend it, who it appeals to and how it can become part of a complete hospitality experience. This knowledge enables bartenders not only to create better cocktails, but also to deliver more meaningful guest experiences.

Within this story, Lillet holds a unique place. With a history spanning more than 150 years, it is still produced in Bordeaux, France, remaining true to its philosophy as a wine-based aperitif crafted from fine wines and natural fruit macerations.

To bring this knowledge to the Greek bar community, Bar Academy Greece and Lillet have joined forces to present Lillet Apéritif Experience – "The New French Aperitif Culture", an educational project exploring the history of the category, current aperitif trends, its commercial potential within the modern bar, and the role it can play in creating a complete hospitality experience.

The educational seminar will take place on Thursday, 25 June, from 12:00 to 15:00, at Bar Academy Athens, welcoming bartenders and hospitality professionals who wish to deepen their understanding of contemporary aperitif culture and Lillet's place within it.

Because understanding a category is about more than knowing the product itself. It is about understanding the culture behind it—and how that culture can be transformed into a better experience for every guest.
